1 medium onion, sliced

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon turmeric (optional)

1. Clean the Gizzards:

Rinse the gizzards under cold water.

Soak in a bowl with water and 1 tablespoon vinegar or lemon juice for 10–15 minutes.

Rinse again and drain well.

2. Tenderize (Optional but Recommended):

Place gizzards in a pot with water, a pinch of salt, and a bay leaf (optional).
